Which one when?
Choose a one-pot dinner when it is cold, when you want something saucy, or when you want to be at the stove for the last ten minutes anyway. The pot does the work while you set the table.
Choose a sheet-pan dinner when you want to be out of the kitchen. You chop, you tray, you slide it in the oven and walk away. The only job is turning things once.
The pot you need
A 5 to 6 quart Dutch oven or heavy pot with a lid, or a deep 12-inch skillet with a lid. Wide pots brown better than tall ones; narrow pots hold more soup. If your lid does not fit tightly, put foil under it.
