Part 1: Lesson 1 - Your menu, your guest count, your dates

Welcome to the course. Six short lessons take you from a blank page to a cleared table: menu and numbers (this lesson), the turkey, the side dishes, dessert and the day's schedule, serving and guests, and leftovers. Each lesson ends with a short "do this now" list.

What this course does: gives you a menu with real recipes, amounts for 6 to 8 or 10 to 12 guests, a clock-time plan for 26 November 2026, and food-safety temperatures that follow US Department of Agriculture (USDA) guidance.

What it does not do: it is not professional advice, and it does not replace your own judgment about guests with allergies or health conditions. When in doubt about a guest's needs, ask them.

The dates are for 2026, and the plan works any year. Thanksgiving is the fourth Thursday of November. In 2026 that is Thursday, 26 November. In any other year, find that Thursday, call it Day 0, and count back.
