Method
- Spread a little hummus on each turkey slice. Roll up tightly.
- Put the remaining hummus in a small container.
- Pack the roll-ups, vegetables, cheese, apple, and crackers into a lunch box with compartments.
- Keep cold with an ice pack until lunch.
This is a lunch for days when you do not want to cook or even use a plate. It has protein, produce, and something crunchy.
Swaps: use hard-boiled eggs, tuna, or baked tofu in place of turkey. Pita chips or pretzels work for crackers. Dip the veggies in tzatziki if you like.
Prep the vegetables on Sunday and portion them in containers. They stay crisp for about 4 days.
