Method
- Add the quinoa and water to a small pot. Bring to a boil, then cover and simmer on low for 15 minutes.
- Turn off the heat and let the quinoa sit, covered, for 5 minutes. Fluff with a fork.
- While it cooks, whisk the tahini, lemon juice, olive oil, and 2 tablespoons of water in a small bowl. Add salt and pepper.
- Pat the chickpeas dry. Warm them in a dry pan for 5 minutes, until lightly crisp.
- Divide the greens between two bowls. Top with quinoa, chickpeas, cucumber, and avocado.
- Drizzle with the dressing and serve.
This bowl is easy to build and easy to change. It has fiber, healthy fats, and plant protein, so it feels like a real meal.
Swaps: use brown rice or farro for the quinoa. Try white beans instead of chickpeas. Add a soft-boiled egg or grilled chicken if you want more protein.
To store, keep the grain, chickpeas, vegetables, and dressing in separate containers in the fridge for up to 4 days. Add the avocado fresh.
